Pickled mushrooms

Mixed with a few chopped herbs and ready to go on the parma ham salad last Saturday night at Hill House.

Delicious! I've never tried making my own but I do love pickled mushrooms.

Thanks. Very easy to make. I boiled up the onions first with vegetable stock, white wine vinegar, salt, cloves, peppercorns till soft then added mushrooms & thyme, allowed to cook for a couple of minutes and let them cool down. You can add all sorts of other ingredients to the marinade. Lemon zest & juice work well too instead of the vinegar.
