Smoked duck and mango salad with coriander dressing

From our summer menu. The smoked duck comes from Severn and Wye smokery in Weston-on-Severn between Gloucester and The Forest of Dean. For the dressing I use a combination of red wine sauce, oliv oil, white wine vinegar, coriander seeds and fresh coriander.

What would be your luxury on the desert island? Ice cream? Well make sure you do it properly then. Here three varities of ice cream are joined by toffee sauce, fresh berries (strawberries raspberies and blueberries), mini marshamllows, glace cherries, chopped nuts, white chocolate drops, dark chocolate drops and finished with a cape gooseberry. Now that's fit, not just for a desert island, but a dessert island.
