Smoked duck and mango salad with coriander dressing

From our summer menu. The smoked duck comes from Severn and Wye smokery in Weston-on-Severn between Gloucester and The Forest of Dean. For the dressing I use a combination of red wine sauce, oliv oil, white wine vinegar, coriander seeds and fresh coriander.
